Zander can be opened also from the back side. Filleting whitefish is quite easy. Pike is common fish on the dining table. In spring perch have lot of roe.
       
       
       
Vendace, small salmonoid  is typical species on big lakes. Cutting the skin of zander fillet. You can also remove Y-bones from pike with the right technics. Whitefish fillets fit very well for many dishes.
       
       
 
     
Fresh zander fillets and whole zander are good material for many delicious dishes!
